Ostriches (Struthio camelus) are a large breed of economically viable bird that is commonly raised for their eggs, feathers, meat, hide and their droppings for manure. Despite not being able to fly, the ostrich has all its strength concentrated in its legs, allowing it to run when needed. It is also in the thighs where a large portion of the bird's soft meat is found, a product that has boosted breeding in recent years. Ostrich meat has a similar flavor and texture to beef and includes minimal levels of fat and cholesterol, which is important information to consider when making food selection. The bird is suitable for slaughter at one year of age and can yield 30 to 40 kilos of boneless meat. The bird, however, has gained greater commercial appeal in obtaining other by-products.
